THE TROUBLES OF WINTER:
Starting on December 21st, the winter season arrives with its cold and wet weather. Winter is the introspective season par excellence. We hibernate and conserve energy to be in full form when the first buds and the rising sap appear in spring.
But, in the meantime, you'll have to overcome the dangers and small troubles of winter, such as: flu, sore throats, colds, rhinopharyngitis, and other unpleasant ENT issues. Not to mention, of course, the ever-present post-Christmas gastroenteritis.

MAINTAINING GOOD HEALTH IN WINTER:
So, how can you maintain good health, face the challenges of winter, and enjoy all the pleasures this season brings?
You simply need to strengthen your immune system and take great care of your Kidney energy (the Kidney has a special connection to this season).

This recipe has an almost alchemical transformation and helps maintain the delicate balance between nature, ancestral tradition, and mankind.
It is designed for 4 people.

This is the base of your recipe. In this beneficial potion will reside the quintessence of all the ingredients that have been simmering.
Pay close attention to its preparation!

Ingredients:
- 3 liters of water
- 10 grams of angelica*
- 2 grams of astragalus*
- 1 slice of ginger*
- 4 chicken breasts cut into 4 cm cubes

1) Pour the 3 liters of water into a pot.
2) Add the chicken and all other ingredients.
3) Bring to a boil. Then simmer for 2 hours over medium heat without covering.

After these two hours of cooking, strain the broth and set the chicken aside in a separate dish as you will use it for your main dish: chicken with four vegetables.

The ingredients of the recipe:
- Astragalus (Radix Astragali / Huang Qi), is an extremely tonic root.
It promotes the rise of yang and strongly tonifies energy. It strengthens the immune system.
- Angelica (Radix Angelica Sinensis, Dang Gui) is a root that tonifies the blood.
It is widely used in China for cases of anemia, cold symptoms, paleness, and dizziness associated with blood deficiency.
- Ginger (Zingiber Officinale / Sheng Jiang) is a rhizome that removes toxicity, especially from fish.
This is why it is served with raw fish in Japanese restaurants. It also has other benefits, including expelling cold and clearing the surface of the body from harmful energy. It also treats nausea.

With this broth, you have created a tonic concentrate of energy and blood that fights fatigue and boosts your immune system.
You can add some Chinese dumplings to cook in the broth.
You can consume this elixir at the beginning of the meal or as a side to the dish that follows.
